Our Story
Nestled in the winding streets of old Tbilisi, NOIR was born from a conviction that dining should be an act of theater. Our founders spent years traveling the Caucasus, gathering recipes whispered by grandmothers in Kakheti, studying fermentation techniques passed down through centuries of supra tradition, and reimagining them through the lens of contemporary gastronomy.
Every dish at NOIR tells a story rooted in Georgian terroir. We source heritage-variety vegetables from the Alazani Valley, wild herbs foraged on the slopes of Kazbegi, and rare spices traded along routes that once connected Tbilisi to the Silk Road. Our kitchen transforms these ingredients with techniques borrowed from Basque Country, Tokyo, and Copenhagen — but the soul remains unmistakably Georgian.
The space itself is deliberate — low amber light, exposed stone walls salvaged from a 19th-century caravanserai, and a soundscape that shifts from polyphonic folk recordings at dusk to minimal electronic compositions as the night deepens. At NOIR, every sense is accounted for.
